Description

A warm and fluffy banana bread recipe that’s perfect for using up overripe bananas.


Ingredients

  • 3 ripe bananas
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ⅓ cup vegetable oil or melted butter
  • ½ cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a medium bowl until smooth.
  3. Combine dry ingredients in a large bowl: flour, baking soda, baking powder, and salt.
  4. Mix the wet ingredients: beat eggs, then stir in sugar, oil (or melted butter), and mashed bananas until combined.
  5. Combine the wet mixture with the dry ingredients, folding until just combined.
  6. Add walnuts or chocolate chips if desired.
  7. Transfer the batter to a greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, until a toothpick inserted comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

This banana bread freezes well; slice it before freezing for easy portions.
