A warm and fluffy banana bread recipe that’s perfect for using up overripe bananas.

- 3 ripe bananas
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ⅓ cup vegetable oil or melted butter
- ½ cup walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a medium bowl until smooth.
- Combine dry ingredients in a large bowl: flour, baking soda, baking powder, and salt.
- Mix the wet ingredients: beat eggs, then stir in sugar, oil (or melted butter), and mashed bananas until combined.
- Combine the wet mixture with the dry ingredients, folding until just combined.
- Add walnuts or chocolate chips if desired.
- Transfer the batter to a greased loaf pan and smooth the top.
- Bake for 50-60 minutes, until a toothpick inserted comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
This banana bread freezes well; slice it before freezing for easy portions.
