Description

A flavorful and nutritious dish combining tender chicken, aromatic spices, and fluffy rice, perfect for a comforting meal.


Ingredients

  • 1 lb chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 cup jasmine or basmati rice, rinsed
  • 2 cups low sodium chicken broth
  • 2 cups fresh spinach
  • Juice of ½ lemon
  • Salt and black pepper, to taste
  • 2 tbsp Greek yogurt for serving (optional)

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes.
  2. Stir in the diced onion, minced garlic, and grated ginger, and cook for 2-3 minutes until the onions soften.
  3. Sprinkle turmeric, paprika, salt, and pepper over the chicken and stir well to coat evenly.
  4. Add the rinsed rice to the pan, mixing it thoroughly with the chicken and spices.
  5. Pour in the chicken broth, ensuring the rice is submerged; raise the heat to bring to a gentle boil.
  6. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes.
  7. After 15 minutes, stir in the fresh spinach, allowing it to wilt slightly.
  8. Squeeze the lemon juice over the dish, adjust seasoning to taste, and serve with a dollop of Greek yogurt if desired.

Notes

For added flavor, prepare chicken and spices in advance. You can also use an air fryer or instant pot for cooking alternatives.
