Description

A colorful medley of fresh vegetables seasoned to perfection, served with a creamy dipping sauce, perfect for appetizers or family dinners.


Ingredients

  • 2 Bell peppers, sliced
  • 1 Zucchini, sliced
  • 2 Carrots, sliced
  • 3 Cloves garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 cup Greek yogurt (or sour cream)
  • 1 tbsp Lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) or the air fryer to 375°F (190°C).
  2. Prep the bell peppers, zucchini, and carrots by slicing them into equal-sized pieces.
  3. Season the chopped vegetables with olive oil, minced garlic, thyme, paprika, salt, and pepper in a mixing bowl.
  4. Spread the seasoned vegetables on a baking sheet in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through, or air fry for about 15 minutes until crispy and golden.
  6. Prepare the dipping sauce by blending Greek yogurt, lemon juice, and herbs in a bowl until smooth.
  7. Serve the vegetable bites hot alongside the dipping sauce.
