Instructions
- Preheat the oven to 400°F (200°C) or the air fryer to 375°F (190°C).
- Prep the bell peppers, zucchini, and carrots by slicing them into equal-sized pieces.
- Season the chopped vegetables with olive oil, minced garlic, thyme, paprika, salt, and pepper in a mixing bowl.
- Spread the seasoned vegetables on a baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, or air fry for about 15 minutes until crispy and golden.
- Prepare the dipping sauce by blending Greek yogurt, lemon juice, and herbs in a bowl until smooth.
- Serve the vegetable bites hot alongside the dipping sauce.
