- 2 Bell Peppers (any colors)
- 1 Zucchini, diced
- 1 cup Corn (fresh or frozen)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Smoked Paprika
- 2 tbsp Lime Juice
- 1/4 cup Fresh Cilantro, chopped
- Salt and Pepper to taste
- Olive Oil for sautéing
Instructions
- Prep the produce: Wash and chop bell peppers, zucchini, and onion into bite-sized pieces; mince garlic finely.
- Heat the frying pan over medium heat and add a touch of olive oil.
- Add the onions and sauté for about 2 minutes until translucent.
- Stir in bell peppers and zucchini; cook for 5 minutes until tender but crunchy.
- Sprinkle in minced garlic, cumin, smoked paprika, salt, and pepper; stir for another minute until fragrant.
- Fold in corn, allowing it to warm through for 2 minutes.
- Drizzle lime juice, toss in cilantro, stir well, and adjust seasoning as necessary.
- Serve hot, garnished with cilantro and lime wedges.
Notes
Make ahead by chopping vegetables a day prior. Can be air-fried or roasted for a different texture.
