Ingredients

  • 2 Bell Peppers (any colors)
  • 1 Zucchini, diced
  • 1 cup Corn (fresh or frozen)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Smoked Paprika
  • 2 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • Salt and Pepper to taste
  • Olive Oil for sautéing

Instructions

  1. Prep the produce: Wash and chop bell peppers, zucchini, and onion into bite-sized pieces; mince garlic finely.
  2. Heat the frying pan over medium heat and add a touch of olive oil.
  3. Add the onions and sauté for about 2 minutes until translucent.
  4. Stir in bell peppers and zucchini; cook for 5 minutes until tender but crunchy.
  5. Sprinkle in minced garlic, cumin, smoked paprika, salt, and pepper; stir for another minute until fragrant.
  6. Fold in corn, allowing it to warm through for 2 minutes.
  7. Drizzle lime juice, toss in cilantro, stir well, and adjust seasoning as necessary.
  8. Serve hot, garnished with cilantro and lime wedges.

Notes

Make ahead by chopping vegetables a day prior. Can be air-fried or roasted for a different texture.
