Instructions
- Preheat your oven to 350°F.
- Grease a 12-cup muffin tin with cooking spray or melted butter.
- Mix the sugar, flour, and a pinch of salt in a large mixing bowl.
- Add the melted butter, eggs, lemon zest, lemon juice, milk, and vanilla, whisking until smooth.
