- 1 lb fresh salmon, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 ripe avocado, peeled and pitted
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1 garlic clove, minced
- Water to thin, if needed
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix well.
- Form the mixture into small meatballs, similar in size to golf balls, and place them on the prepared baking sheet.
- Bake for 15-18 minutes or until golden and cooked through.
- While baking, blend avocado, Greek yogurt, lime juice, minced garlic, and seasoning in a blender until smooth. Adjust thickness with water as needed.
- Serve the meatballs hot with the creamy avocado sauce for dipping.
