- 1 1/2 cups vanilla wafers, crushed
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 teaspoon lemon juice
- 2–3 ripe bananas, sliced
- 1 tablespoon lemon juice (to prevent browning)
- Whipped cream
- Extra vanilla wafers and banana slices for garnish
Instructions
- Prepare the Crust: In a medium bowl, combine the crushed vanilla wafers, granulated sugar, and melted butter. Stir until the crumbs look like wet sand. Press into the bottom of a 9-inch springform pan. Set aside.
- Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until incorporated. In a separate bowl, whip heavy cream and lemon juice until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
- Layer the Cheesecake: Toss sliced bananas with lemon juice. Spread half of the cheesecake filling over the crust, then half of the sliced bananas. Spread remaining cheesecake over bananas, followed by remaining banana slices.
- Chill the Cheesecake: Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Serve: Top with whipped cream, garnish with extra vanilla wafers and banana slices, slice, and enjoy!
