- 1 ½ pounds boneless skinless chicken tenderloins
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 1 large egg (room temperature)
- 2 cups panko breadcrumbs
- 1 cup mayonnaise
- ½ cup Thai sweet chili sauce
- 1 teaspoon Sriracha (or more to taste)
- 2 tablespoons honey
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper (optional)
- Canola oil (for frying)
- Parsley (chopped, for garnish)
Instructions
- In a medium bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Whisk together until smooth to make the Bang Bang Sauce.
- Soak chicken tenderloins in buttermilk for at least 10 minutes.
- In three shallow dishes, mix flour, cornstarch, garlic powder, kosher salt, black pepper, and optional cayenne in the first dish; whisk egg and reserved Sriracha in the second; and place panko breadcrumbs in the third.
- Dredge chicken in the flour mixture, then dip into the egg mix, and finally roll in breadcrumbs.
- Heat canola oil in a deep fryer or heavy-bottomed pot. Fry chicken pieces in batches for about 6 minutes or until golden brown and crisp.
- Drain on paper towels and serve drizzled with Bang Bang Sauce, garnished with parsley.
