- 2 Chicken Breasts
- 1 cup BBQ Sauce
- 2 Sweet Potatoes, cubed
- 2 cups Cabbage, shredded
- 1 cup Carrots, shredded
- 1/2 cup Mayonnaise
- 2 tbsp Vinegar
- Zesty Pickles, to taste
- Olive Oil, for drizzling
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the sweet potatoes into cubes, then toss them in a bowl with olive oil, salt, and pepper.
- Spread the seasoned cubes on your roasting pan in a single layer.
- Roast the sweet potatoes in the oven for about 25-30 minutes, flipping halfway through.
- Cook chicken breasts on the grill or stovetop pan until fully cooked, roughly 6-7 minutes per side.
- Shred or chop the chicken into bite-sized pieces and combine with BBQ sauce.
- Prepare the coleslaw by mixing cabbage and carrots in a bowl, then stir in mayonnaise and vinegar.
- Assemble your bowls by layering roasted sweet potatoes, BBQ chicken, coleslaw, and zesty pickles.
