Description

Delicious BBQ Chicken Bowls layered with tender shredded chicken, caramelized sweet potatoes, and crunchy coleslaw.


Ingredients

  • 2 Chicken Breasts
  • 1 cup BBQ Sauce
  • 2 Sweet Potatoes, cubed
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, shredded
  • 1/2 cup Mayonnaise
  • 2 tbsp Vinegar
  • Zesty Pickles, to taste
  • Olive Oil, for drizzling
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the sweet potatoes into cubes, then toss them in a bowl with olive oil, salt, and pepper.
  3. Spread the seasoned cubes on your roasting pan in a single layer.
  4. Roast the sweet potatoes in the oven for about 25-30 minutes, flipping halfway through.
  5. Cook chicken breasts on the grill or stovetop pan until fully cooked, roughly 6-7 minutes per side.
  6. Shred or chop the chicken into bite-sized pieces and combine with BBQ sauce.
  7. Prepare the coleslaw by mixing cabbage and carrots in a bowl, then stir in mayonnaise and vinegar.
  8. Assemble your bowls by layering roasted sweet potatoes, BBQ chicken, coleslaw, and zesty pickles.
