Ingredients

- 1 lb ground chicken
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1–2 green chilies
- 1 tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp turmeric
- 1 tsp garam masala
- Salt to taste
- 1 tbsp oil
- 2 tbsp chopped cilantro
- Juice of ½ lemon
- 2 cups all-purpose flour
- 4 tbsp oil or ghee
- ½ tsp salt
- ½ cup warm water (as needed)
Instructions
- Make the Dough: In a mixing bowl, combine flour, salt, and oil or ghee. Gradually add warm water until a soft dough forms. Knead gently, cover, and let rest for 30 minutes.
- Prepare the Filling: In a frying pan, heat oil over medium heat. Add cumin seeds and sauté until fragrant. Add onions, garlic, ginger, and green chilies. Cook until onions are golden brown.
- Cook the Chicken: Add ground chicken, coriander powder, turmeric, garam masala, and salt. Cook until the chicken is thoroughly cooked. Stir in lemon juice and cilantro. Allow filling to cool.
- Shape the Samosas: Divide dough into balls, roll into ovals, and cut in half. Create cones, fill with chicken mixture, and seal.
- Fry the Samosas: Heat oil in a deep frying pan to 325°F. Fry samosas for 5–7 minutes until golden brown. Drain on paper towels.
- Serve: Enjoy hot with chutney or sauce.
Notes
Make your filling in advance and store it for enhanced flavor. These samosas freeze well; layer them with parchment paper to prevent sticking.
