- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons fresh thyme leaves
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Sear each side for about 3-4 minutes until golden brown.
- Add the blueberries and thyme to the skillet and drizzle with balsamic vinegar if using. Gently stir to coat the chicken.
- Transfer everything to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Serve warm, garnished with additional blueberries and thyme if desired.
