Refreshing yogurt bites swirled with sweet blueberry compote, perfect for a healthy snack or dessert.
Ingredients

- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- Prepare the blueberry compote: In a small saucepan, combine the blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes until the blueberries soften. If using cornstarch, dissolve in a little water and add to thicken. Remove from heat and let cool.
- Blend the yogurt base: In a mixing bowl, mix Greek yogurt and vanilla extract until smooth.
- Assemble the yogurt bites: Spoon the yogurt mixture into silicone molds, filling about three-quarters full.
- Add the blueberry swirl: Drizzle cooled blueberry compote on top and use a toothpick to swirl it into the yogurt.
- Freeze for at least 3 hours until solid.
- Store and enjoy: Remove from molds and store in an airtight container.
Notes
These yogurt bites can be made ahead and stored in the freezer for up to a month.
