- 1 cup buffalo sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups cooked rice (white or brown)
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1 avocado, sliced
- 1/4 cup ranch dressing or blue cheese dressing
- Fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut your chicken breasts into bite-sized pieces.
- Toss the chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Spread the seasoned chicken on a parchment paper-lined baking sheet.
- Bake for 15-20 minutes, or until fully cooked.
- Warm your buffalo sauce in a saucepan if not using store-bought.
- Transfer the baked chicken to a bowl and pour over the buffalo sauce.
- Layer warm rice in bowls, topped with buffalo chicken, corn, black beans, and cheddar cheese.
- Add avocado slices and finish with ranch or blue cheese dressing.
