Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1 avocado, sliced
  • 1/4 cup ranch dressing or blue cheese dressing
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut your chicken breasts into bite-sized pieces.
  3. Toss the chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Spread the seasoned chicken on a parchment paper-lined baking sheet.
  5. Bake for 15-20 minutes, or until fully cooked.
  6. Warm your buffalo sauce in a saucepan if not using store-bought.
  7. Transfer the baked chicken to a bowl and pour over the buffalo sauce.
  8. Layer warm rice in bowls, topped with buffalo chicken, corn, black beans, and cheddar cheese.
  9. Add avocado slices and finish with ranch or blue cheese dressing.
