- 4 cups fresh greens (romaine or spinach)
- 2 tomatoes, sliced
- 1 cucumber, diced
- 2 carrots, shredded
- 1 cup sharp cheddar cheese or crumbled feta
- Pickles, jalapeños, or avocado for toppings
- 1/2 cup dressing (ranch or creamy avocado)
Instructions
- Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Season with salt, pepper, and spices. Cook until browned, about 6-8 minutes.
- Prepare the vegetables: While the beef cooks, chop the veggies. Slice the tomatoes, dice the cucumbers, and shred the carrots. Toss them in a large bowl.
- Assemble the bowls: Begin with a base of greens in each bowl. Spoon the warm beef over the top, add vegetables, cheese, and toppings.
- Dress and serve: Drizzle dressing over the bowl and serve with additional toppings on the side.
