Description

  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup diced apples (Fuji or Honeycrisp)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it or lining it with parchment paper.
  3. Mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  4. Combine the sugars, eggs, and melted butter in a larger bowl, then stir in the grated carrots, zucchini, and diced apple.
  5. Integrate the dry mixture into the wet mixture, blending gently.
  6. Fold in optional walnuts or pecans.
  7. Transfer the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a speedier option, use an air fryer at 320°F (160°C) for about 35-40 minutes. This bread freezes well; slice and place wax paper between slices before freezing.
