- 1 cup grated zucchini

- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare your loaf pan by greasing it or lining it with parchment paper.
- Mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
- Combine the sugars, eggs, and melted butter in a larger bowl, then stir in the grated carrots, zucchini, and diced apple.
- Integrate the dry mixture into the wet mixture, blending gently.
- Fold in optional walnuts or pecans.
- Transfer the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a speedier option, use an air fryer at 320°F (160°C) for about 35-40 minutes. This bread freezes well; slice and place wax paper between slices before freezing.
