Description

Delicious Cheese Chicken Enchiladas filled with shredded chicken, cheese, and topped with a rich enchilada sauce, perfect for family gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup queso fresco or shredded cheese
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the shredded chicken, 1/2 cup of cheese, diced onions, garlic powder, cumin, salt, and pepper in a mixing bowl.
  3. Warm tortillas in a microwave for 20-30 seconds to soften.
  4. Assemble enchiladas by spooning filling onto tortillas and rolling them tightly.
  5. Repeat with the remaining tortillas and filling.
  6. Add enchilada sauce over rolled tortillas and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro before serving.
