- 2 cups cooked shredded chicken
- 1 cup queso fresco or shredded cheese
- 8 corn tortillas
- 1 cup enchilada sauce
- 1/2 cup diced onions
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the shredded chicken, 1/2 cup of cheese, diced onions, garlic powder, cumin, salt, and pepper in a mixing bowl.
- Warm tortillas in a microwave for 20-30 seconds to soften.
- Assemble enchiladas by spooning filling onto tortillas and rolling them tightly.
- Repeat with the remaining tortillas and filling.
- Add enchilada sauce over rolled tortillas and sprinkle with remaining cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
