  • 1 cup heavy cream

  • 1 cup shredded mozzarella cheese

  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the rotini according to package instructions until al dente, typically around 8–10 minutes. Drain and set it aside.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Toss the chicken pieces in Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook the chicken in the skillet for 6–7 minutes, flipping occasionally until browned and cooked through. Remove the chicken from the skillet and set it aside.
  3. Make the creamy sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Stir in the mozzarella, Parmesan, and cheddar cheeses until melted into a smooth sauce.
  4. Combine & simmer: Return the cooked rotini and chicken to the skillet. Gently toss everything together, allowing the pasta and chicken to mingle in the sauce. Let it simmer for an additional 2–3 minutes.
  5. Serve: Garnish with fresh chopped parsley and additional cheese if desired. Serve hot.
