Description
Delicious lasagna rolls filled with tender chicken, creamy Alfredo sauce, and fresh spinach, baked to perfection with gooey cheese on top.
Ingredients
- Lasagna Noodles
- Cooked Chicken (shredded or diced)
- Alfredo Sauce
- Ricotta Cheese
- Fresh Spinach
- Mozzarella Cheese
- Parmesan Cheese
- Garlic, Salt, Pepper, and Nutmeg (to taste)
Instructions
- Cook the Lasagna Noodles: Boil a large pot of salted water and add the lasagna noodles, cooking until al dente. Drain and lay them flat on a clean kitchen towel or parchment paper to prevent sticking.
- Prepare the Filling: In a non-stick skillet over medium heat, add a tablespoon of oil and sauté minced garlic until fragrant. Toss in fresh spinach and cook until wilted. Remove from heat and combine with shredded chicken, ricotta, half of the mozzarella, and seasonings in a large bowl.
- Assemble the Rolls: Spread a layer of Alfredo sauce on the bottom of your baking dish. Take a noodle, spoon a generous amount of the chicken and cheese mixture onto one end, and roll it tightly. Place seam-side down in the baking dish. Repeat until all are filled.
- Top with Sauce: Once all rolls are snug in the dish, pour remaining Alfredo sauce over the top. Sprinkle with the remaining mozzarella and a generous dusting of Parmesan cheese.
- Bake: Preheat your oven to 375°F (190°C) and bake for 25-30 minutes, or until the sauce is bubbly and the cheese is golden.
- Serve and Enjoy: Remove from oven and allow to cool slightly. Slice into portions, and serve hot, garnishing with fresh basil if desired.
Notes
Can prepare the dish a day in advance and bake just before serving. For a lighter option, consider air frying the rolls.
