Description

A comforting dish of tender rotini enveloped in a creamy garlic Parmesan sauce, topped with juicy garlic Parmesan chicken.


Ingredients

  • 340g rotini pasta
  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped parsley

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning on all sides.
  2. Heat the olive oil in a non-stick skillet over medium-high heat and sear the chicken for 5–6 minutes on each side until golden brown and cooked to 165°F.
  3. Set the chicken aside to rest.
  4. In the same skillet, sauté the minced garlic over medium heat for 1–2 minutes until fragrant.
  5. Add the heavy cream and let it simmer gently.
  6. Stir in the Parmesan and mozzarella cheese until melted and smooth.
  7. Toss the cooked rotini in the sauce until coated.
  8. Slice the rested chicken and layer it on top of the pasta.
  9. Serve hot, garnished with extra Parmesan and parsley.

Notes

Make-ahead tips: Prepare the sauce and pasta a day in advance. Reheat and combine before serving.
