- 340g rotini pasta
- 2 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped parsley
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning on all sides.
- Heat the olive oil in a non-stick skillet over medium-high heat and sear the chicken for 5–6 minutes on each side until golden brown and cooked to 165°F.
- Set the chicken aside to rest.
- In the same skillet, sauté the minced garlic over medium heat for 1–2 minutes until fragrant.
- Add the heavy cream and let it simmer gently.
- Stir in the Parmesan and mozzarella cheese until melted and smooth.
- Toss the cooked rotini in the sauce until coated.
- Slice the rested chicken and layer it on top of the pasta.
- Serve hot, garnished with extra Parmesan and parsley.
