Deliciously chewy cookies featuring dark chocolate, tart cherries, and a hint of coffee from mocha chips.

- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1 pinch Salt
- 0.5 cups Unsalted Butter (softened)
- 0.75 cups Brown Sugar
- 0.5 cups Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 cup Dark Chocolate Chips
- 0.5 cups Mocha Chips
- 0.75 cups Dried Cherries (chopped)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract, mixing until just combined.
- Gradually add the flour mixture to the butter mixture and mix on low speed until just combined.
- Gently fold in the dark chocolate chips, mocha chips, and chopped dried cherries.
- Scoop dollops of dough onto a prepared cookie sheet, leaving space between each cookie.
- Bake for 10-12 minutes or until golden around the edges and slightly underbaked in the center.
- Allow cookies to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
Notes
Chill dough for 30 minutes for thicker cookies; freeze for longer storage.
