Description

Ingredients

  • 1 lb chicken breast, diced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Crisp veggies (lettuce, tomatoes, cucumbers, red onion)
  • 1/2 cup tzatziki sauce
  • Pita bread (optional)

Instructions

  1. Combine olive oil, lemon juice, oregano, salt, and pepper in a mixing bowl and whisk to create a marinade. Toss in the diced chicken, cover, and marinate in the fridge for at least 30 minutes.
  2. Heat a skillet over medium heat and add the marinated chicken, cooking for 6-8 minutes or until golden brown and fully cooked.
  3. Meanwhile, wash and chop the crisp veggies and arrange them in a bowl.
  4. Once the chicken is cooked, nestle it on top of the veggies.
  5. Drizzle tzatziki sauce over the chicken and veggies; if desired, serve with warm, toasted pita bread.

Notes

For maximum flavor, consider marinating the chicken a few hours in advance or overnight. You can customize the bowl with additional grains or spice it up with jalapeños.
