- 1/4 cup olive oil
- 2 tablespoons lemon juice

- Crisp veggies (lettuce, tomatoes, cucumbers, red onion)
- 1/2 cup tzatziki sauce
- Pita bread (optional)
Instructions
- Combine olive oil, lemon juice, oregano, salt, and pepper in a mixing bowl and whisk to create a marinade. Toss in the diced chicken, cover, and marinate in the fridge for at least 30 minutes.
- Heat a skillet over medium heat and add the marinated chicken, cooking for 6-8 minutes or until golden brown and fully cooked.
- Meanwhile, wash and chop the crisp veggies and arrange them in a bowl.
- Once the chicken is cooked, nestle it on top of the veggies.
- Drizzle tzatziki sauce over the chicken and veggies; if desired, serve with warm, toasted pita bread.
