- 2 cups mixed vegetables (bell peppers, carrots)

Instructions
- Prepare the chicken: Rinse chicken under cold water and pat dry. Season both sides with salt, pepper, and herbs.
- Sauté the aromatics: Heat olive oil in a skillet and cook chopped onions and minced garlic until fragrant.
- Sear the chicken: Place chicken skin-side down in the skillet and brown for 5-7 minutes, then flip and cook for 5 more minutes.
- Add vegetables and liquids: Layer in vegetables and pour in chicken broth. Place chicken on top, skin-side up.
- Bake to perfection: Transfer to a preheated oven at 375°F (190°C) and bake for 25-30 minutes until chicken reaches 165°F (75°C).
