Description

A delightful blend of tender chicken, fresh zucchini, and melted cheese, creating a comforting and flavorful dish perfect for any occasion.


Ingredients

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a large skillet over medium heat.
  3. Add the chopped onion and minced garlic, stirring for about 3 minutes.
  4. Toss in the diced chicken and cook until browned, about 5–7 minutes.
  5. Stir in the sliced zucchinis, halved cherry tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  6. Transfer the mixture to a medium baking dish.
  7. Sprinkle the shredded cheese on top.
  8. Bake in the oven for about 20 minutes, until the cheese is melted and golden.
  9. Let it cool for a couple of minutes before serving.

Notes

You can prepare the chicken and vegetable mixture a day in advance. Make sure to add cheese just before baking.
