Ingredients

- 2 chicken breasts, diced
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, stirring for about 3 minutes.
- Toss in the diced chicken and cook until browned, about 5–7 minutes.
- Stir in the sliced zucchinis, halved cherry tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to a medium baking dish.
- Sprinkle the shredded cheese on top.
- Bake in the oven for about 20 minutes, until the cheese is melted and golden.
- Let it cool for a couple of minutes before serving.
Notes
You can prepare the chicken and vegetable mixture a day in advance. Make sure to add cheese just before baking.
