Description

Delightful and aromatic cookies that combine the flavors of warm cinnamon rolls in a portable, bite-sized treat.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 3-5 minutes.
  4. Beat in the egg and vanilla extract until smooth.
  5. Mix in the flour mixture until just combined.
  6. Combine cinnamon and remaining brown sugar in a small bowl.
  7. Roll the dough into balls, then coat in the cinnamon-sugar mixture.
  8. Place on the baking sheet with space in between.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Mix powdered sugar with milk until smooth and drizzle over cooled cookies.

Notes

For a vegan alternative, substitute the egg with a flax egg. Refrigerate cookie dough for up to a week.
