- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 3-5 minutes.
- Beat in the egg and vanilla extract until smooth.
- Mix in the flour mixture until just combined.
- Combine cinnamon and remaining brown sugar in a small bowl.
- Roll the dough into balls, then coat in the cinnamon-sugar mixture.
- Place on the baking sheet with space in between.
- Bake for 10-12 minutes until the edges are lightly golden.
- Mix powdered sugar with milk until smooth and drizzle over cooled cookies.
Notes
For a vegan alternative, substitute the egg with a flax egg. Refrigerate cookie dough for up to a week.
