Ingredients

  • 1 cup granulated sugar
  • 1 cup brewed coffee, cooled
  • 1 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust: Mix crushed graham crackers, sugar, and melted butter; press into a springform pan. Bake for 10 minutes, then cool.
  3. Make the filling: Beat cream cheese and sugar until smooth, then mix in sour cream, coffee, and vanilla. Add eggs one at a time, mixing gently.
  4. Pour filling over the crust, shake to remove air bubbles. Bake for 50-60 minutes until the center is set but has a slight jiggle.
  5. Cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
  6. Carefully remove from the pan, slice, and serve.
