- 1 cup granulated sugar
- 1 cup brewed coffee, cooled
- 1 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: Mix crushed graham crackers, sugar, and melted butter; press into a springform pan. Bake for 10 minutes, then cool.
- Make the filling: Beat cream cheese and sugar until smooth, then mix in sour cream, coffee, and vanilla. Add eggs one at a time, mixing gently.
- Pour filling over the crust, shake to remove air bubbles. Bake for 50-60 minutes until the center is set but has a slight jiggle.
- Cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
- Carefully remove from the pan, slice, and serve.
Notes
For a lighter option, you can substitute sour cream with Greek yogurt. Consider adding espresso powder for extra flavor.
