Description
A comforting side dish featuring vibrant green beans, tender baby potatoes, and crispy bacon, all infused with ranch seasoning.
Ingredients
Scale
- 1 lb fresh green beans (trimmed)
- 4 cups baby potatoes (diced)
- 6 slices bacon (chopped)
- 1 onion (diced)
- 2 garlic cloves (minced)
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- ½ tsp dried thyme
- ½ tsp dried rosemary
- Salt and pepper to taste
Instructions
- Cook the bacon: In a large skillet over medium heat, add chopped bacon. Cook until crispy, around 7-10 minutes. Remove the bacon and set it aside, but keep those flavorful drippings in the skillet.
- Sauté the onion: Add diced onion to the drippings in the skillet, and sauté for about 3 minutes until translucent. Then, add minced garlic and sauté for another minute until fragrant.
- Brown the potatoes: Add the diced baby potatoes to the skillet. Let them brown for 5–7 minutes, stirring occasionally to ensure they get a nice golden color.
- Add remaining ingredients: Toss in the green beans, ranch seasoning, dried thyme, dried rosemary, and chicken broth. Stir everything well to combine.
- Simmer: Cover the skillet with a lid and let it simmer for 15–20 minutes. Check occasionally, ensuring that the potatoes and green beans cook until tender and the flavors meld beautifully.
- Finish and serve: Stir in your crispy bacon, season with salt and pepper to taste, and serve warm.
