  • 4 cups baby potatoes (diced)
  • 6 slices bacon (chopped)
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: In a large skillet over medium heat, add chopped bacon. Cook until crispy, around 7-10 minutes. Remove the bacon and set it aside, but keep those flavorful drippings in the skillet.
  2. Sauté the onion: Add diced onion to the drippings in the skillet, and sauté for about 3 minutes until translucent. Then, add minced garlic and sauté for another minute until fragrant.
  3. Brown the potatoes: Add the diced baby potatoes to the skillet. Let them brown for 5–7 minutes, stirring occasionally to ensure they get a nice golden color.
  4. Add remaining ingredients: Toss in the green beans, ranch seasoning, dried thyme, dried rosemary, and chicken broth. Stir everything well to combine.
  5. Simmer: Cover the skillet with a lid and let it simmer for 15–20 minutes. Check occasionally, ensuring that the potatoes and green beans cook until tender and the flavors meld beautifully.
  6. Finish and serve: Stir in your crispy bacon, season with salt and pepper to taste, and serve warm.
