- 2 cups bowtie pasta
- 1 pound chicken breast, cubed
- 2 cups broccoli florets
- 1/2 cup unsalted butter
- 2 cloves garlic, minced
- 1 unit lemon, juiced and zested
- 1 teaspoon paprika
- Salt and pepper, to taste
- Optional: Fresh parsley, chopped for garnish
Instructions
- Bring a large pot of salted water to a rolling boil. Add bowtie pasta and cook according to package instructions until al dente. Reserve a cup of pasta water, drain the rest, and set aside.
- In a large skillet over medium heat, melt half of the unsalted butter. Add cubed chicken, season with paprika, salt, and pepper. Cook for 5-7 minutes until golden and cooked through.
- Add broccoli florets to the skillet and cook for an additional 3-4 minutes until vibrant and tender.
- Push the chicken and broccoli to one side of the skillet. In the cleared space, melt the remaining butter, then add minced garlic. Sauté for about 30 seconds and mix everything together.
- Add the cooked bowtie pasta, lemon juice, and zest. Mix well, adding reserved pasta water as needed for desired consistency.
- Adjust seasoning and garnish with parsley before serving.
Notes
You can swap chicken with shrimp or plant-based protein as desired. For a healthier option, consider using an air fryer for chicken or roasting broccoli.
