Instructions
- Heat the skillet: In a large skillet, drizzle in the olive oil over medium heat, letting it warm up while you prepare the onions.
- Caramelize onions: Add the sliced onion to the skillet and cook, stirring occasionally, until caramelized, about 10-15 minutes. Stir in the minced garlic towards the end and cook for an additional minute.
- Brown the chicken: Season your chicken breasts generously with salt and pepper. Nestle them into the skillet with the onions, cooking for 5-7 minutes per side until golden brown and cooked through.
- Create the sauce: Once the chicken is cooked, remove it from the skillet. Pour in the chicken broth, scraping up any browned bits from the bottom. Fold in the cooked rice, sour cream, thyme, and shredded cheese.
