- 1 pound chicken breasts, diced
- 1 pound gnocchi
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden and no longer pink, about 6–8 minutes.
- Add garlic: Once browned, add the minced garlic and sauté for about a minute until fragrant.
- Cook the gnocchi: Stir in the gnocchi and cook according to package instructions, about 2-3 minutes.
- Incorporate cream: Pour in the heavy cream, stirring to combine until creamy.
- Add cheese and spinach: Sprinkle in the Parmesan while stirring, then add the fresh spinach, stirring until wilting, about 2-3 minutes.
- Serve and garnish: Remove from heat and serve warm, garnished with fresh parsley if desired.

You can prep the chicken and gnocchi in advance and store them separately in the fridge for up to 24 hours.
