Description

Ingredients

  • 2 chicken breasts, seasoned
  • 2 cups broccoli florets
  • 1 cup long-grain or basmati rice
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the ingredients: Chop broccoli into florets and mince garlic.
  2. Cook the rice: In a pot, combine rice with salted water or broth. Bring to a boil, then lower to a simmer and cover until tender.
  3. Sear the chicken: Heat a large skillet over medium-high heat, add oil, and sear the chicken for 5-7 minutes per side until golden.
  4. Add garlic and broccoli: Remove chicken from skillet, add garlic, and sauté until fragrant. Then add broccoli and cook for 3-4 minutes.
  5. Create the sauce: Pour in cream and broth, add Parmesan, and simmer until slightly thickened.
  6. Combine & serve: Slice chicken, toss with broccoli and sauce, and serve over rice. Garnish with parsley if desired.

Notes

For a lighter version, swap heavy cream with half-and-half or coconut milk. Marinade chicken to enhance flavor.
