- 2 cups broccoli florets
- 2 cups sliced carrots
- 1 cup shredded cheese (cheddar, Gruyère, or mozzarella)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- Salt and pepper to taste
- Breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly steam the cauliflower, broccoli, and carrots until just tender, about 5-7 minutes.
- In a saucepan, melt butter over medium heat, then stir in flour to form a roux. Cook for 1-2 minutes.
- Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes.
- Stir in the shredded cheese and season with salt and pepper.
- In a baking dish, combine the steamed vegetables with the cheese sauce.
- If desired, sprinkle breadcrumbs on top.
- Bake for 25-30 minutes, or until bubbling and golden.
- Let cool slightly before serving.
