- Mix the ingredients: In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, breadcrumbs, egg, salt, and pepper. Stir until you achieve a well-blended mix, thick and slightly sticky.
- Form the bites: Wet your hands slightly to prevent sticking, then scoop out a handful of the mixture and roll it into small balls (about the size of a golf ball).
- Heat the oil: Pour vegetable oil into a frying pan, filling it about 1 inch deep. Heat the oil over medium heat until it shimmers.
- Fry the bites: Carefully place the potato balls in the hot oil, making sure not to overcrowd the pan. Fry each side until golden brown and crispy, usually around 3-4 minutes.
- Drain and serve: Once golden, remove the bites and place them on the paper towel-lined plate to drain any excess oil. Serve while warm for maximum cheesiness and flavor.
