  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon dried dill weed
  • 1 teaspoon baking powder
  • 1 cup mayonnaise
  • Fresh dill, chopped (for aioli)
  • 2 tablespoons lemon juice
  • 1 clove minced garlic
  • 1 tablespoon Dijon mustard
  • 4 brioche buns
  • 4 slices of cheddar cheese
  • Shredded lettuce
  • Dill pickle chips
  • Butter (for toasting)
  • Vegetable oil (for frying)

Instructions

  1. Whisk together the buttermilk, dill pickle juice, egg, salt, black pepper, garlic powder, and paprika in a medium bowl. Submerge chicken and cover; refrigerate for at least 2 hours, preferably overnight.
  2. Combine flour, cornstarch, dill weed, baking powder, salt, and black pepper in a large shallow dish; whisk to mix.
  3. Remove one chicken breast from the marinade, letting excess liquid drip off. Press both sides into the flour mixture, shaking off excess. Double dredge if desired.
  4. Heat vegetable oil in a heavy-bottomed pot over medium-high heat to 350°F (175°C).
  5. Fry chicken for 6-8 minutes per side until golden and cooked through (internal temperature 165°F/74°C).
  6. Transfer fried chicken to a wire rack to drain excess oil.
  7. Mix mayonnaise, dill, lemon juice, garlic, and Dijon mustard in a small bowl. Season to taste and chill for 30 minutes.
  8. Brush brioche buns with melted butter and toast on a skillet until golden.
  9. Assemble by spreading dill aioli on both buns. Layer shredded lettuce, crispy chicken, a slice of cheese, and dill pickle chips before closing.
