Description
Delicious crispy tortilla roll ups filled with tender roast beef, melty cheese, and served with a rich au jus for dipping.

- 1 lb roast beef (thinly sliced, deli-style or leftover)
- 1.5 cups shredded cheese (mozzarella or provolone)
- 4 large flour tortillas (soft yet sturdy)
- 2 tbsp butter (melted, for brushing)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp soy sauce
- Salt & pepper (to taste)
Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Lay each tortilla flat and distribute slices of roast beef across the center.
- Sprinkle shredded cheese over the beef, leaving an inch at the edges.
- Fold the sides of the tortilla in slightly and roll from the bottom up, seam-side down on the baking sheet.
- Brush tops with melted butter and sprinkle with garlic powder, onion powder, and parsley.
- Bake for 12-15 minutes until crispy and cheese is melted.
- While baking, combine beef broth, Worcestershire sauce, soy sauce, remaining seasonings in a saucepan, and simmer for 5-7 minutes.
- Remove roll ups from the oven, slice into bite-sized pieces, and serve warm with au jus.
Notes
For a make-ahead option, prepare roll ups and refrigerate, adding 3-5 minutes to bake time. Try air frying for even crispier results.
