Description

Delicious crispy tortilla roll ups filled with tender roast beef, melty cheese, and served with a rich au jus for dipping.


Ingredients

  • 1 lb roast beef (thinly sliced, deli-style or leftover)
  • 1.5 cups shredded cheese (mozzarella or provolone)
  • 4 large flour tortillas (soft yet sturdy)
  • 2 tbsp butter (melted, for brushing)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Lay each tortilla flat and distribute slices of roast beef across the center.
  4. Sprinkle shredded cheese over the beef, leaving an inch at the edges.
  5. Fold the sides of the tortilla in slightly and roll from the bottom up, seam-side down on the baking sheet.
  6. Brush tops with melted butter and sprinkle with garlic powder, onion powder, and parsley.
  7. Bake for 12-15 minutes until crispy and cheese is melted.
  8. While baking, combine beef broth, Worcestershire sauce, soy sauce, remaining seasonings in a saucepan, and simmer for 5-7 minutes.
  9. Remove roll ups from the oven, slice into bite-sized pieces, and serve warm with au jus.

Notes

For a make-ahead option, prepare roll ups and refrigerate, adding 3-5 minutes to bake time. Try air frying for even crispier results.
