Ingredients

  • 1.5 lbs baby potatoes (Yukon gold or red)
  • 23 tbsp olive oil
  • 2 tbsp unsalted butter, melted (optional)
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (rosemary, thyme, parsley, or Italian blend)
  • Optional garnish: Chopped fresh parsley and extra parmesan

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the baby potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain and let cool slightly.
  4. Smash each potato on a baking sheet with a fork or potato masher until slightly flattened.
  5. Drizzle with olive oil and melted butter.
  6. Sprinkle minced garlic, parmesan cheese, salt, pepper, and dried herbs atop the smashed potatoes.
  7. Bake in the preheated oven for 20-25 minutes.
