Description

Deliciously soft and buttery cookies reminiscent of the classic churro, with a delightful crunch and warm cinnamon flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 cup granulated sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  6. Chill the dough for about 30 minutes.
  7. Roll the dough into balls and coat them in the 1/4 cup of granulated sugar.
  8. Place cookies on a lined baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a chewier cookie, add an extra egg yolk or substitute half of the granulated sugar with brown sugar. Can be made gluten-free with a gluten-free flour blend.
