Description

Ingredients

  • 1 cup crushed chocolate cookies
  • 5 tablespoons melted butter
  • 16 ounces cream cheese
  • 1 cup granulated sugar
  • 8 ounces melted dark chocolate
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1 cup whipped cream
  • ½ cup chocolate drizzle

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the crust by combining crushed chocolate cookies and melted butter, pressing into the bottom of a springform pan.
  3. Bake the crust for 10 minutes, then allow to cool.
  4. Make the filling by beating the cream cheese until smooth, then gradually adding the granulated sugar.
  5. Incorporate the melted dark chocolate and vanilla extract.
  6. Add the eggs one at a time, mixing minimally.
  7. Fold in the fresh raspberries gently.
  8. Pour the filling over the cooled crust and smooth the top.
  9. Bake for 55-60 minutes until the center is just set.
  10. Chill the cheesecake in the fridge for at least 4 hours or overnight.
  11. Serve with whipped cream and a chocolate drizzle.

Notes

For best results, use full-fat ingredients. Cheesecake can be made a day in advance for improved flavor.
