- 1 cup crushed chocolate cookies
- 5 tablespoons melted butter
- 16 ounces cream cheese
- 1 cup granulated sugar
- 8 ounces melted dark chocolate
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
- 1 cup whipped cream
- ½ cup chocolate drizzle
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by combining crushed chocolate cookies and melted butter, pressing into the bottom of a springform pan.
- Bake the crust for 10 minutes, then allow to cool.
- Make the filling by beating the cream cheese until smooth, then gradually adding the granulated sugar.
- Incorporate the melted dark chocolate and vanilla extract.
- Add the eggs one at a time, mixing minimally.
- Fold in the fresh raspberries gently.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 55-60 minutes until the center is just set.
- Chill the cheesecake in the fridge for at least 4 hours or overnight.
- Serve with whipped cream and a chocolate drizzle.
Notes
For best results, use full-fat ingredients. Cheesecake can be made a day in advance for improved flavor.
