Description

Ingredients

  • ½ cup melted butter
  • ¼ cup sugar
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup melted chocolate (semi-sweet or dark)
  • 1 tablespoon espresso or strong coffee

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl until resembling wet sand.
  3. Press firmly into the bottom of a springform pan and Bake for 10 minutes; let cool.
  4. Beat cream cheese in a large bowl until smooth.
  5. Add sugar and mix until combined.
  6. Incorporate eggs one at a time, mixing on low.
  7. Fold in melted chocolate and espresso until combined.
  8. Pour the filling over the cooled crust and Smooth the top.
  9. Bake at 325°F (160°C) for 55-60 minutes.
  10. Turn off the oven and leave the cheesecake inside for one hour to cool gradually.
  11. Chill in the refrigerator for at least 4 hours, preferably overnight.
