Delicious chicken meatballs with ricotta cheese in a creamy Alfredo sauce, served over pasta or zoodles.
Ingredients

- 1 pound ground chicken
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 cups Alfredo sauce
- Pasta or zoodles for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Mix together the ground chicken, ricotta cheese, Parmesan cheese, egg, breadcrumbs, minced garlic, parsley, salt, and pepper in a large bowl.
- Shape the mixture into meatballs, about 1-2 inches in diameter, and place them evenly spaced on a baking sheet.
- Bake for 20 minutes or until cooked through and golden brown.
- Heat the Alfredo sauce in a pan over medium heat until warmed through.
- Add the meatballs to the sauce and let them simmer for about 5 minutes.
- Serve the meatballs over pasta or zoodles, garnished with extra parsley and Parmesan if desired.
Notes
For make-ahead meal prep, refrigerate uncooked meatballs for up to 24 hours. They can also be cooked in an air fryer.
