Description

Delicious chicken meatballs with ricotta cheese in a creamy Alfredo sauce, served over pasta or zoodles.


Ingredients

  • 1 pound ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 cups Alfredo sauce
  • Pasta or zoodles for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the ground chicken, ricotta cheese, Parmesan cheese, egg, breadcrumbs, minced garlic, parsley, salt, and pepper in a large bowl.
  3. Shape the mixture into meatballs, about 1-2 inches in diameter, and place them evenly spaced on a baking sheet.
  4. Bake for 20 minutes or until cooked through and golden brown.
  5. Heat the Alfredo sauce in a pan over medium heat until warmed through.
  6. Add the meatballs to the sauce and let them simmer for about 5 minutes.
  7. Serve the meatballs over pasta or zoodles, garnished with extra parsley and Parmesan if desired.

Notes

For make-ahead meal prep, refrigerate uncooked meatballs for up to 24 hours. They can also be cooked in an air fryer.
