Ingredients

  • 1 cup ricotta cheese

  • 1/4 cup fresh parsley, chopped

  • 1/2 cup breadcrumbs

  • 3 cups Alfredo sauce
  • Pasta or zoodles for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, ricotta, Parmesan, parsley, garlic, egg, breadcrumbs, salt, and pepper. Mix until just combined.
  3. Shape the mixture into meatballs, about 1-2 inches in diameter, and place them on a lined baking sheet.
  4. Bake for 20 minutes, or until golden brown and cooked through.
  5. In a skillet, heat the Alfredo sauce over medium heat until gently bubbling.
  6. Add the baked meatballs to the skillet and simmer for about 5 minutes.
