- 1 pound ground chicken
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 3 cups Alfredo sauce
- Pasta or zoodles for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, ricotta, Parmesan, parsley, garlic, egg, breadcrumbs, salt, and pepper. Mix until just combined.
- Shape the mixture into meatballs, about 1-2 inches in diameter, and place them on a lined baking sheet.
- Bake for 20 minutes, or until golden brown and cooked through.
- In a skillet, heat the Alfredo sauce over medium heat until gently bubbling.
- Add the baked meatballs to the skillet and simmer for about 5 minutes.
- Serve over pasta or zoodles and garnish with parsley.
Notes
Make-ahead tips: Prepare meatballs in advance and store in the fridge for up to a day, or freeze before adding to sauce. For a quicker option, use an air fryer at 375°F (190°C) for about 15 minutes.
