Description

Delicious Chicken and Sweet Potato Bowls combine roasted sweet potatoes, pan-seared chicken, and a zesty creamy sauce for a nourishing meal packed with flavor.


Ingredients

  • 2 cups Sweet Potatoes, cubed
  • 1 tbsp Olive Oil
  • 1 lb Pan-Seared Chicken, boneless, skinless, cubed
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • Salt and Black Pepper to taste
  • 2 cups Cooked White or Brown Rice
  • 0.5 cup Greek Yogurt or Mayonnaise
  • 1 tbsp Lime Juice
  • 1 tsp Sriracha
  • 0.5 tsp Cumin
  • 0.25 tsp Paprika
  • Cayenne Pepper to taste
  • 1 cup Steamed or Sautéed Green Vegetables
  • Fresh Cilantro or Parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes in a mixing bowl with olive oil, salt, and pepper, then spread them on a baking sheet.
  3. Roast for 25–30 minutes, turning halfway through, until golden and tender.
  4. Sear the chicken in a skillet with olive oil and seasonings for 5–7 minutes until golden.
  5. Cook the rice according to package instructions.
  6. Mix Greek yogurt or mayonnaise, lime juice, sriracha, and cayenne pepper in a small bowl.
  7. Assemble bowls with rice, roasted sweet potatoes, chicken, green vegetables, and sauce, garnished with herbs.

Notes
