Description
A quick yet decadent dish featuring tender cod fillets simmered in a luscious roasted red pepper sauce.

- 2 tablespoons Olive oil
- 1 medium Onion (Diced)
- 2 cloves Garlic (Minced)
- 2 cups Roasted red peppers
- 1 cup Vegetable broth
- 1 teaspoon Smoked paprika
- 1 teaspoon Dried oregano
- Salt and Pepper to taste
- 4 fillets Cod
- 2 tablespoons Fresh parsley (Chopped)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion, stirring frequently for about 4-5 minutes until they soften and turn translucent. As the onion mellows, add minced garlic, cooking for another minute until fragrant.
- Add the roasted red peppers, vegetable broth, smoked paprika, dried oregano, salt, and pepper to the skillet. Allow it to simmer for 5 minutes.
- Pour this mixture into a blender or food processor and blend until perfectly smooth.
- Return the sauce to the skillet and bring it back to a gentle simmer. Nestle the cod fillets into the sauce, spooning some of the mixture over them. Cover and cook for about 8 minutes, or until the fish flakes easily with a fork.
- Sprinkle the fresh chopped parsley over the dish once cooked, and serve piping hot.
Notes
Make the red pepper sauce ahead and reheat before adding the cod. For a spicy kick, add red pepper flakes.
