Delicious Cod in Roasted Red Pepper Sauce

Description

A quick yet decadent dish featuring tender cod fillets simmered in a luscious roasted red pepper sauce.


Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 2 cups Roasted red peppers
  • 1 cup Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • Salt and Pepper to taste
  • 4 fillets Cod
  • 2 tablespoons Fresh parsley (Chopped)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion, stirring frequently for about 4-5 minutes until they soften and turn translucent. As the onion mellows, add minced garlic, cooking for another minute until fragrant.
  2. Add the roasted red peppers, vegetable broth, smoked paprika, dried oregano, salt, and pepper to the skillet. Allow it to simmer for 5 minutes.
  3. Pour this mixture into a blender or food processor and blend until perfectly smooth.
  4. Return the sauce to the skillet and bring it back to a gentle simmer. Nestle the cod fillets into the sauce, spooning some of the mixture over them. Cover and cook for about 8 minutes, or until the fish flakes easily with a fork.
  5. Sprinkle the fresh chopped parsley over the dish once cooked, and serve piping hot.

Notes

Make the red pepper sauce ahead and reheat before adding the cod. For a spicy kick, add red pepper flakes.
