A vibrant Persian rice dish, Jeweled Rice, combines aromatic spices, dried fruits, and nuts, making it a delightful centerpiece for any meal.

- 2 cups Basmati Rice
- 4 cups Water
- 1 teaspoon Salt
- 2 tablespoons Butter or Ghee
- 1 pinch Saffron Threads
- 1 teaspoon Cinnamon
- 1 teaspoon Cardamom
- 1 cup Dried Barberries
- 1 cup Dried Apricots
- 3/4 cup Golden Raisins
- 1/2 cup Slivered Almonds
- 1/2 cup Pistachios
- 1 tablespoon Orange Zest
- 1 tablespoon Sugar
Instructions
- Rinse the rice in a large bowl until the water runs clear, then drain and set aside.
- Soak the saffron in warm water for a few minutes.
- Cook the rice by bringing 4 cups of water to a boil, adding the rinsed rice and salt, then reducing heat and simmering for 15 minutes.
- Toast the almonds and pistachios in a skillet over medium heat for 3-5 minutes.
- Sauté the barberries, apricots, raisins, spices, orange zest, and sugar in the same skillet for 3-5 minutes.
- Combine the cooked rice with the saffron water and the sautéed mixture, gently folding together.
- Serve on a platter, garnished with nuts and saffron.
Notes
For make-ahead, prepare rice a few hours in advance and reheat with water to maintain moisture. Customize with different fruits or nuts as desired.
