Description

A vibrant Persian rice dish, Jeweled Rice, combines aromatic spices, dried fruits, and nuts, making it a delightful centerpiece for any meal.


Ingredients

  • 2 cups Basmati Rice
  • 4 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons Butter or Ghee
  • 1 pinch Saffron Threads
  • 1 teaspoon Cinnamon
  • 1 teaspoon Cardamom
  • 1 cup Dried Barberries
  • 1 cup Dried Apricots
  • 3/4 cup Golden Raisins
  • 1/2 cup Slivered Almonds
  • 1/2 cup Pistachios
  • 1 tablespoon Orange Zest
  • 1 tablespoon Sugar

Instructions

  1. Rinse the rice in a large bowl until the water runs clear, then drain and set aside.
  2. Soak the saffron in warm water for a few minutes.
  3. Cook the rice by bringing 4 cups of water to a boil, adding the rinsed rice and salt, then reducing heat and simmering for 15 minutes.
  4. Toast the almonds and pistachios in a skillet over medium heat for 3-5 minutes.
  5. Sauté the barberries, apricots, raisins, spices, orange zest, and sugar in the same skillet for 3-5 minutes.
  6. Combine the cooked rice with the saffron water and the sautéed mixture, gently folding together.
  7. Serve on a platter, garnished with nuts and saffron.

Notes

For make-ahead, prepare rice a few hours in advance and reheat with water to maintain moisture. Customize with different fruits or nuts as desired.
