Description

Delicious and crispy potato samosas filled with tender potatoes and peas, seasoned with aromatic spices.

Ingredients

Scale
  • 2 cups Cooked Potatoes
  • 1 cup Green Peas
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tablespoon Ginger
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Turmeric Powder
  • 1 teaspoon Garam Masala
  • 0.5 teaspoon Chili Powder
  • Salt to taste
  • 2 tablespoons Vegetable Oil
  • 0.25 cup Fresh Cilantro
  • 2 cups All-Purpose Flour
  • Water
  • 2 tablespoons Vegetable Oil/Ghee

Instructions

  1. Prepare the Filling: In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add chopped onions, stirring until they turn golden and caramelized. Toss in minced garlic, ginger, cumin seeds, coriander powder, turmeric, garam masala, and optional chili powder. Cook for about a minute until fragrant.
  2. Mix in Vegetables: Add the cooked potatoes and green peas to the pan. Use a fork to mash and mix everything thoroughly, ensuring an even distribution of spices. Season with salt to taste, then remove from heat and set aside to cool.
  3. Make the Dough: In a mixing bowl, combine the flour and salt. Add ghee or vegetable oil, rubbing it into the flour until crumbly. Gradually add water, kneading until you form a smooth, firm dough. Allow it to rest for about 30 minutes.
  4. Shape the Samosas: Divide the dough into equal-sized balls. Roll each ball into a circle, about 6 inches in diameter. Cut it in half to form two semi-circles. Create a cone by folding one semi-circle, sealing the edges with a little water.
  5. Fill and Seal: Pack the cooled potato filling into the cone-shaped dough, being sure not to overfill. Moisten the open edge and pinch to seal the samosa perfectly.
  6. Fry Them Up: Heat oil in your deep fryer or pot to 350°F (175°C). Gently drop the samosas into the hot oil, frying until they turn a gorgeous golden brown and crisp—about 5–7 minutes. Drain on paper towels.

Notes

These samosas can also be baked for a healthier version. Serve with mint chutney or tamarind sauce for dipping.
