Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Parmesan cheese for topping (optional)

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and reserve a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms, cooking until softened (about 5-7 minutes).
  3. Add the spinach and stir until wilted (about 2-3 minutes).
  4. Mix in the drained pasta, seasoning with salt and pepper, adding reserved pasta water if necessary to achieve desired consistency.
  5. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For a heartier green, substitute spinach with kale. Whole grain or gluten-free pasta can be used for dietary preferences.
