- 8 ounces mushrooms, sliced
- 4 cups fresh spinach

- Parmesan cheese for topping (optional)
Instructions
- In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms, cooking until softened (about 5-7 minutes).
- Add the spinach and stir until wilted (about 2-3 minutes).
- Mix in the drained pasta, seasoning with salt and pepper, adding reserved pasta water if necessary to achieve desired consistency.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
For a heartier green, substitute spinach with kale. Whole grain or gluten-free pasta can be used for dietary preferences.
