  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pastry by rolling it out to about 1/8 inch thick and fit it into a deep-dish pie pan.
  3. Mix the filling by combining goat cheese, heavy cream, and eggs in a mixing bowl. Whisk until smooth and season with salt, pepper, and herbs.
  4. Layer the vegetables evenly over the pastry.
  5. Pour the cheese mixture over the vegetables, spreading it evenly.
  6. Bake the pie for 40-45 minutes until the filling is set and golden brown.
  7. Cool slightly before slicing and serving warm.
