- 1 lb chicken breast, cut into bite-sized pieces
- 1 medium fresh pineapple, chopped into chunks
- 1 cup bell peppers, chopped (any color)
- 2 tbsp soy sauce
- 2 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper, to taste
- Oil, for sautéing
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and chop the bell peppers and pineapple into similar-sized chunks.
- Sauté the chicken in a heavy-bottomed skillet over medium-high heat with oil, seasoning with salt and pepper, until golden brown (about 5-7 minutes).
- Incorporate minced garlic and grated ginger into the skillet and stir for about a minute.
- Combine the chopped bell peppers, cooking for an additional 2-3 minutes until they soften slightly.
- Add the soy sauce and honey or brown sugar along with the pineapple chunks, stirring well and letting it simmer for 5 minutes.
- Serve hot, paired with steamed rice or quinoa.
Notes
Marinate chicken in soy sauce and pineapple juice for 30 minutes before cooking for added flavor. Feel free to add vegetables such as snow peas for extra nutrition.
