Description

Ingredients

  • 2 lbs potatoes (Yukon Gold or Russet)
  • 2 large onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 1 packet onion soup mix or 1 cup condensed French onion soup
  • 1 cup beef or vegetable broth
  • 1 cup shredded Gruyère cheese
  • ½ cup sour cream or heavy cream
  • Salt & pepper to taste
  • Optional garnish: fresh thyme, parsley, or crispy onions

Instructions

  1. Caramelize the onions: In a large skillet over medium heat, melt your butter or heat the olive oil. Add the thinly sliced onions and a sprinkle of salt. Cook them slowly for about 20 to 25 minutes, stirring frequently until they turn a beautiful golden brown.
  2. Prepare your potatoes: While the onions caramelize, slice your potatoes evenly for uniform cooking. Pat them dry with paper towels to help them roast crisply without excess moisture.
  3. Mix your base: In a large bowl, combine the sour cream (or heavy cream), onion soup mix or condensed soup, broth, and half of your cheese. Stir until everything blends seamlessly, then fold in the caramelized onions.
  4. Layer the casserole: Preheat your oven to 375°F (190°C). Grease a baking dish and begin layering: start with a layer of potatoes, followed by the onion mixture. Repeat layers until all ingredients are used, finishing with a generous sprinkle of the remaining cheese on top.
  5. Bake to perfection: Cover the baking dish with foil and bake for 30 minutes. After that, remove the foil and bake for an additional 15 to 20 minutes, until the cheese is deliciously golden and bubbly.
  6. Garnish & serve: Remove from the oven and allow it to cool for a few minutes. Sprinkle your optional garnishes over the top and serve hot.

Notes

Make-ahead tip: Assemble everything a day in advance and refrigerate. Add extra time to cooking when you’re ready to bake.
