Description

Ingredients

  • 400g spaghetti
  • 250g Italian sausage
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente, about 9-11 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the sausage, crumbling it until browned and crisp, about 5-7 minutes. Remove and set aside.
  3. Add butter and minced garlic to the skillet, cooking until fragrant, about 1 minute.
  4. Toss in the spinach and sauté until wilted, about 2-3 minutes.
  5. Return the cooked sausage to the skillet, add the drained spaghetti, and toss to combine.
  6. Sprinkle mozzarella and Parmesan over the pasta and cover to let cheese melt for 2-3 minutes.
  7. Season with salt and black pepper, toss again, and serve hot.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat gently on the stove.
