- 400g spaghetti
- 250g Italian sausage
- 3 cups fresh spinach
- 4 cloves garlic, minced
- 4 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a boil and cook spaghetti until al dente, about 9-11 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the sausage, crumbling it until browned and crisp, about 5-7 minutes. Remove and set aside.
- Add butter and minced garlic to the skillet, cooking until fragrant, about 1 minute.
- Toss in the spinach and sauté until wilted, about 2-3 minutes.
- Return the cooked sausage to the skillet, add the drained spaghetti, and toss to combine.
- Sprinkle mozzarella and Parmesan over the pasta and cover to let cheese melt for 2-3 minutes.
- Season with salt and black pepper, toss again, and serve hot.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat gently on the stove.
