Ingredients

  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

Instructions

  1. Wash and slice the zucchinis under cold water, aiming for 1-inch thick rounds or half-moons.
  2. Melt the butter in a small saucepan over low heat, adding minced garlic until fragrant.
  3. Coat the zucchini slices with olive oil, salt, pepper, and warm garlic butter mixture.
  4. Skewer the zucchini onto soaked skewers, packing them close together.
  5. Preheat the grill to medium-high (around 400°F).
  6. Grill the skewers for 8-10 minutes, turning occasionally until tender and charred.
  7. Finish with lemon juice just before serving.
